because panda express sounded so good but we figured out to make it at home!
here’s what you’ll need:
- chicken cut in cubes
- 2 eggs
- 1.5 cups almond flour
- 1/4 cup tapioca flour
- 3 oranges + zest + peel
- 1/4 c tamari/soy sauce
- 3 tbsp sriracha
- 2 tbsp maple syrup
- 2 inches of grated ginger
- 4 grated garlic cloves
- 3 tbsp tapioca flour
- Coat chicken in egg > almond flour + tapioca flour mixture seasoned with s&p and some orange zest
- Fry those guys up in some avo oil (I did air fryer, but either works!)
- In a bowl, whisk all items for sauce.
- Back in your pan with chicken and medium heat, add your sauce in and let it thicken.
- Serve over veggies + rice, top with sesame seeds + green onions if you dare.
