summer menu needs to include paleo chicken piccata 🍋
the best for a summer weeknight, quick and whole 30. we had these over zucchini noodles.
n e e d e d:⠀
+ chicken breasts
+ 1/4 c almond flour
+ 3 tbsp tapioca flour
+ 1/4 c ghee
+ 1 small onion + 3 garlic cloves
+ 1 c chicken broth
+ 1/2 c coco milk
+ 1/3 c capers
+ 1 lemon juiced
l e t ‘ s g o:
1. Butterfly chicken breasts to thin guys
2. In a bowl: combine flours + s&p and dredge your chickens
3. Pan-fry with some ghee until brown
4. Put chicken aside and then add onion + garlic to same pan + more ghee here
5. Add broth + lemon – let simmer and thicken with all that chicken + tapioca bits
6. Add coconut cream at the end and put your chicken back in.
7. Serve over zoodles or lentil pasta, if you dare!
